Life Through Food: Kebabs

With Spring a foot and Summer around the corner (and the fact that we are stuck in our houses), it’s the perfect time to pull out your grill and have a savory delight! “GreBeL’s Kebabs” are a family favorite, and what better to do while we have free time!

to cut:

  • 1 lb. chicken
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 onions
  • 3 small zucchini

Marinade:

  • 1/2 cup oil (olive or vegetable)
  • 2/3 cup soy sauce
  • 1/2 cup honey
  • 2 parts minced garlic
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/8 cup chopped parsley

Cut chicken into 1 inch cubes (the end of your thumb) and place in a large bowl. Cut zucchini in half, then slice. Cut peppers into 1 inch squares. Place veggies in a SEPARATE bowl. Cut both onions into squares and mix one with the chicken and the other with the vegetables.

I find that frozen chicken works best because it is easier to cut into cubes.

Once your vegetables and meat are prepared, you can get the marinade ready. Combine oil, soy sauce, honey, and spices in a small bowl and whisk together until smooth. The honey shouldnā€™t be stuck at the bottom or it wonā€™t be evenly distributed. Pour half of the marinade into the VEGGIES FIRST!! This ensures that any honey that sunk to the bottom will go on the chicken when the second half of the marinade is mixed in. Cover both bowls and place in the refrigerator for 1-8 hours.

After marinating, soak the skewers in cold water for 15 minutes before skewering the meat and veggies. Grill at 400 degrees Fahrenheit for 10-20 minutes, rotating every 2 minutes until meat is cooked.

(NEVER consume raw chicken!!)

Once the meat is cooked, and kebabs are done, you can eat them right off of the skewer or you can use a fork to slide the food off of the skewer (this is especially helpful with small children).
