Welcome to the second installation of Life Through Food!! This week, I’ll be talking about Krumkake, a Norwegian recipe that resembles that of a waffle cone. It is a holiday favorite in my family, and when I made this batch, all of the krumkake was gone in less than two days!
Krumkake: A Norwegian Favorite
- 2/3 stick of butter (5 tablespoons)
- 2/3 cup of milk
- 2/3 cup granulated sugar
- 1 cup all purpose flour
- 2 eggs
- (optional) 1 tablespoon vanilla, almond, peppermint, lemon or chocolate extract.
First step is to melt the butter, either in a microwave or on the stove. Make sure the butter doesn’t brown, or it will leave a strange aftertaste. In a stand mixer (or power mixer), combine sugar and butter until thoroughly blended. Add the eggs, mixing until a nice light yellow. Add the milk and flour and blend with the mixer until batter is smooth and thick, like pancake mix.
Once the batter is finished, use a 1/4 cup or ladle to spoon batter onto the Krumkake grill. This is a relatively cheap grill will a lace design. Close the grill and wait approximately 2 minutes with color control set at 3 for even, golden brown Krumkake. Use a fork to remove finished Krumkake and place on a thin, clean, dish towel to prevent the Krumkake from drying out.
